Pumpkin rigatoni

While you cook the pasta, bake the pumpkin in the oven with a splash of olive oil, salt, and pepper. When the pumpkin is soft, dice it and fry it with a small garlic slice in melted butter. Drain the rigatoni and add it to the frying pan to finish frying it all together. If necessary, season the dish with salt and serve it very hot with some sprinkled Parmesan cheese.
Black pasta with green vegetables
Blanch green asparagus, squash, celery strips and peas (these have to be tender) in a pot with a little water and salt. Drain them and set them aside. Then, cook the pasta and drain it too. Finally, mix everything together, add salt and pepper and season the dish with fresh basil leaves and very fine grated Parmesan cheese.
Pasta with mushrooms in cream
For this recipe, cook the pasta together with its sauce. Bring the cream to a boil with a little salt and pepper, and add the hard pasta to let it cook as it shrinks along with the sauce. Next, fry the mushrooms separately with a little olive oil, garlic, and lemon. When they’re done, add them to the same pot where the pasta is cooked. Lastly, add herbs and spices to your taste.
Vegetable soup with pasta
You need vegetable broth, carrots, peas, artichokes and spinach to prepare this fabulous dish. Start by cooking the vegetables and, when they are almost ready, add the pasta. The good thing about this dish is that it works with all sorts of fresh herbs – you can even add grated ginger!
Fusilli with broccoli pesto
Cook the fusilli (curly pasta) al dente, drain it, and set it aside. To prepare the pesto, crush broccoli, basil, garlic, almonds, pine nuts and extra virgin olive oil with some salt, pepper and lemon. Serve it on top of the pasta with some cooked broccoli and sliced almonds – really delicious!
Mexican style pasta salad
For a Mexican style, cook the pasta al dente in water and salt. Once it’s ready, drain the pasta and put it in cold water. Chop tomatoes into small cubes, jalapeños into slices, and coriander into large pieces. Add them to the pasta along with some green olives and sweet chilies. For the dressing, try preparing a mixture of extra virgin olive oil, coarse salt, lime, and black pepper. Enjoy!
Spaghetti aglio e oleo
To make this recipe, sauté very thin slices of garlic with a little chili and parsley in a pan with olive oil. Then add the cooked and drained spaghetti, mix well and, to finish, add salt and pepper and the grated cheese you like best.
Vegetarian macaroni gratin
Cook the macaroni al dente, drain and put it in cold water to break the cooking process. Once you have the pasta ready, mix it with homemade tomato sauce (we’re sure you have some great recipes in your recipe book), sliced courgette, yellow pepper, and mozzarella cheese. Season the meal with salt and pepper, add more cheese on top (only for cheese lovers) and broil it in the oven.
Sorrentina-style gnocchi
To make the sauce, you only need to combine garlic, onion, and crushed tomato with a good olive oil. You can also add a little oregano, basil or any other spice you like. The gnocchi are cooked like the other types of pasta. Finally, mix everything together, season it with salt and pepper, and serve the dish very hot with some grated parmesan cheese.
Pasta with hard-boiled egg
Cook the spirals until they are al dente, drain them and run them through a stream of cold water. Mix the pasta with a sliced boiled egg, mushrooms that have been sautéed in butter, and a few chopped chives. Also add a little salt and pepper. Finally, cover the dish with grated Emmentaler cheese and broil it.
